PM River Cruises Pty Ltd operates the award-winning Proud Mary cruise boat. We are currently seeking a qualified full-time Chef.

The boat operates out of Murray Bridge, 80km from Adelaide, South Australia and involves living on-board with time onshore on a roster basis.

The salary offered is $70,000 – $80,000 per annum plus superannuation.

The Chef is responsible for the following tasks:

· Menu planning with management according to seafood/meats/vegetables that are seasonal, economical and provide an innovative offering to customers

· Preparing, cooking, portioning, seasoning and plating food that meets the expectations of customers of the boat

· Examining food stock to ensure quality

· Full responsibility for management of inventory and kitchen budget

· Following procedures for food ordering, receiving and food storage according to regulations

· Managing, training and recruiting other kitchen staff and apprentices

· Ensuring that health and safety procedures are followed and quality standards are met

· Communicating any known or potential health and safety issues or any required training needs to the captain

· Interacting with customers and attendance at captain’s dinner nights to ensure customer satisfaction with the cruise experience

· Responsible for safety processes in the kitchen, ordering of supplies and inventory management, costs management

· Maintaining relationships with suppliers to ensure quality of produce, timely delivery and competitive pricing of supplies

· Updating the captain on the overall operational performance of the kitchen

The applicant must have the following skills and experience:

· Diploma in Hospitality Management or at least 3 years of full-time work experience as a Chef

· Prior experience in a cruise ship or boat is preferred

· Strong inter-personal skills
